What are Micro-Greens and Sprouts?

Micro-greens- are the stage of growth after germination and emergence have occurred when the first set of leaves (cotyledons) develop.

Sprouts- are the germinated seed of a vegetable, harvested before true leaves can form.

Why eat Micro-Greens?

Early research has indicated that micro-greens contain up to 40% more phytochemicals (beneficial nutrients and components) than their full-grown counterparts.
Though these little greens are small in stature, they contain extremely high levels of powerful vitamins, minerals, and health-supporting components. -webmd.com
The nutrients in micro-greens are more concentrated than in their fully grown counterparts:
-
A cup of red cabbage micro-greens has three times more folate than mature red cabbage.
-
A cup of arugula micro-greens has 100% more vitamin A than arugula.
-
Radish micro-greens have double the amount of calcium and are higher in omega 3s than radishes.
-
Compared to broccoli, broccoli micro-greens have a higher content of the antioxidant sulforaphane, which helps lower fasting blood glucose levels and can protect against heart disease and cancer. -bannerhealth.com

Why eat Sprouts?

Sprouts are rich in a number of important nutrients. While the specific ratio of nutrients varies depending on the type of sprout, they generally contain high levels of folate, magnesium, phosphorus, and vitamin K. In fact, they have higher amounts of these nutrients than fully-grown versions of the same plants. -webmd.com
